Ismael and Diana Perez, owners of Margarita's restaurant at Marco Town Center Mall, are so confi dent about the quality of their food that they promise you'll agree they serve the best Mexican food on Marco or they'll give you your meal for free! Their confi dence springs both from their cus-tomers' comments and the fact that Ismael is the chef and knows that everything, from their beans and rice to their famous salsa, is made fresh daily in house. Of course this entails a lot of prep work and when I met Diana to talk about this article early one morning recently, Ismael was already hard at work in the kitchen preparing for the day. Everything on the menu is made to order so, especially at busy times, don't expect your meal to appear too quickly. However this is a blessing in disguise because it gives diners the opportunity to enjoy their complimentary homemade chips ( hot and crunchy from the oven) and delicious tomato salsa ( so popular they go through between three and fi ve boxes of it a day). When Ismael left his home in Monterrey, Mexico, and came to Marco Island, some twelve years ago, he started his US culinary career as a cook at Konrad's Seafood and Grille ( one of Marco Island's premier restaurants) and he learnt many of his skills in the four years he worked there. Now that they have their own restaurant Ismael and Diana make a great team... with Ismael in the kitchen and Diana in charge of front of house they are able to keep tight control of quality and service and ensure that every customer is greeted with a smile.
